There are main two kind whole potato powder: one is potato flake and one is potato granules.

Nowadays, Potato powder is widely used in compound potato chips, potato mud, snacks, puffed food and infant food.
Potato granules, flakes and potato starch are different. The potato granules and the flakes are the dehydrations of fresh potatoes. They contain all dry matter of potatoes in addition to potato skin.
 Due to maintain the integrity of potato granules as much as possibly in the produce process the potato granules and flakes after watering have the nutrition, flavor and taste of cooked potatoes. Potato starch is only one of many ingredients of potato. So potato starch does not have the nutrition, flavor and taster of potatoes.
